About Snapper
The pink snapper is a reef dweller, silvery pink with electric blue spots that are brightest on the younger fish (often called squire). They grow big and old, with better fish pushing well over 5kg and the true trophies past 10kg. You can read the full rundown on our snapper species page.
The Best Time to Catch Snapper
Snapper are on the reefs all year, but June to September is the peak, known as prime pink snapper season, when the fish school up and feed hard. Where to Find Snapper in Sydney
Look for reef, gravel and broken bottom in anywhere from around 20 to 80 metres. Grounds like Long Reef and the 12 Mile hold good fish, and any patch of structure with bait over it is worth a drift. How to Catch Snapper
Snapper respond to two main approaches. Bait fishing with pilchards, squid and fresh fish flesh over a berley trail is a proven winner, fished on light leader so the bait looks natural. Soft plastics and slow-sinking jigs worked down through the water column are deadly too, especially on a slow drift across the reef. Keep it light and natural and let them eat it.
Cooler water brings the snapper in close, which makes winter a brilliant time to chase them.
Cooking Snapper
Snapper is a genuine treat. A whole fish scored and baked with lemon and herbs is hard to beat, or pan-fry the fillets skin-side down for crisp skin and sweet, moist white flesh. As always, bleed and ice your catch straight away for the best eating, and keep only what you need within the NSW limits.
